LEAF-certified restaurants are at the forefront of environmentally-responsible foodservice. They prioritize serving local and organic food, reducing energy and water consumption, utilizing environmentally-preferable supplies, minimizing waste, and implementing various sustainable practices. LEAF sets the highest standards for environmentally-conscious foodservice, with independent third-party on-site audits assessing the overall environmental footprint of each business. These audits enable consumers to easily locate green dining options. As the sole national Canadian foodservice certification of its kind, LEAF holds a unique position in promoting sustainability in the industry.

The criteria and standards established by LEAF are developed in accordance with international benchmarks and the latest environmental science data. They continually evolve to address the challenges faced by the foodservice industry and are updated annually. LEAF Certification offers accreditation to restaurants that demonstrate commitment to environmental and sustainable foodservice practices. Each certified restaurant undergoes an on-site review conducted by a LEAF Accredited Consultant. To attain certification, restaurants must meet minimum requirements in ten key areas of sustainability: energy use, food purchasing and menu items, supplies, building and location, furnishing and decorative items, chemicals, waste and recycling, employees, policy and innovation, and water use.
