Directions Vitacost® Coconut Flour Baking Tips: • Substitute ¼ cup to 1/3 cup Vitacost® Certified Organic Coconut Flour for 1 cup of grain-based flour • Increase the amount of liquid by adding more eggs or milk • You can also increase the moisture by adding pureed fruits or vegetables, such as applesauce or baked, mashed sweet potato • When blending, be sure to stir well so mixture is completely smooth Try Vitacost® Coconut Flour in these fulfilling breakfast flapjacks: Coconut Pancakes Ingredients ¼ cup Vitacost® Certified Organic Coconut Flour 1/8 tsp. baking soda Pinch of salt 2 Tbsp. Vitacost® Certified Organic Extra Virgin Coconut Oil 1 Tbsp. raw honey 3 eggs, room temperature ¼ cup coconut milk ½ tsp. pure vanilla extract Directions 1. In a small bowl, mix coconut flour, baking soda and salt. 2. In a medium bowl, beat together coconut oil, honey and eggs. Add coconut milk and vanilla, stirring until combined. 3. Fold in flour mixture, being careful not to overmix but ensuring batter is smooth. 4. In a skillet over medium heat, add a dime-sized amount of coconut oil to grease the skillet. 5. Ladle batter onto skillet and cook until edges are dry, flip and cook until brown on the underside – about 1 or 2 minutes more. 6. Serve warm pancakes with plenty of maple syrup or your favorite toppings.
